3Great cooking results. Design needs some work.

I'm overall very happy with my purchase of the Sous Vide Supreme. It does what it promises -- it silently hits temperatures precisely and holds them there. Other reviewers have already stated the obvious (no vacuum sealer included, etc..) but there are enough niggling problems with the physical design that they're worth calling out for potential buyers to be aware of.First, the lid design is disappointing. It's a flimsy 1-ply piece of stamped stainless steel. For a tool intended to hold temperatures, it should really be insulated to give the most stable temperature possible while consuming the least energy -- and the SVS folks know this, as they've included an "insulating mat" with the lid. It's essentially a cheap piece of rubber like you'd find in a mousepad from 1995, cut to the shape of the lid. It doesn't sit flat and it looks/feels very cheap for a $400+ appliance.The lid also is completely flat on the underside. During regular operation, a great deal of condensation collects on the bottom, and there's no place for it to run to. This means when you remove the lid, water splashes all over the place. If the underside of the lid were simply slightly creased to slope towards a point in the middle, all the condensation would collect there, making less mess.The lid doesn't attach to the base unit in any way. Every time you remove it, you need to carefully try to lift it up with one corner down, pulling it to the center of the basin, to prevent condensation from flying all over, then you need counter space to put it down. Since the top of the lid is unadorned stainless steel, scratches on the top are inevitable.The basin itself has no means for removing water when you're done cooking. It's fixed into the bottom of the unit, and the only way to get water out is to rig up a siphon of some sort, or to lift the whole thing up and pour (hot) water down the sink. A tank of warm water that sits around for long periods of time and is difficult to empty/clean is a recipe for a very grungy appliance in no time.The controls on the front are cheap membrane buttons. Think the clicky plastic bubble type buttons on cheap microwaves from the early 90s. It's functional, but it feels very cheap and setting a temperature and timer takes tons of clicks.The wire racks included for the inside are fairly crooked and wobble on a flat surface. It's not causing me any problems, but it is annoying to get this when you just shelled out $400.The included power cable is comically short. Fortunately it's a standard AC cable so you can replace it easily.It sounds like I hate the thing from all of this, but I really do like my SVS a great deal. It performs very, very well. The people behind it just need to increase focus on their industrial design -- if a competitor like Breville swept in with a similar product it would not be hard to outclass the SVS on form factor and look/feel.

5Fantastic Small Appliance - Easy Gourmet Cooking for Busy Home Chefs

Our interest in sous vide cooking grew from being lucky enough sporadicly to sample food prepared this way in a few restaurants. Nothing as fancy as The French Laundry, but still wonderful, memorable food. The sous-vide process is very easy for any cook - just season the raw meat or veggies; seal in a vacuum bag (not included, but our FoodSaver works great); cook at the listed temperature for the recommended time; sear to put a nice color on the outside of the food, if desired. The advantage of the method is that as the food is sealed in a bag, it loses very little moisture during cooking. Most items take about 1-2 hours with zero supervision, but you can sous vide cook them months in advance and then freeze them. When you want a delicious meal, just defrost and sear them to rewarm and finish, making the method a really nice time-saver for midweek gourmet cooking. The food is reliably cooked to perfection, incredibly moist and totally delicious. Timing is very forgiving, so it is gratifyingly difficult to overcook your expensive steaks! This makes preparing the rest of the meal very easy. Before the Sous Vide Supreme became available, we went to the lengths of obtaining a laboratory water bath, but, we weren't sure how clean it was and it was much too big to keep in the kitchen. Having spotted a recent mini-review of Sous Vide Supreme cooker by Cooks Illustrated, we decided to try one risk-free from Amazon. The results have been nothing short of miraculous - I will never cook a steak any other way, if I have the choice! We have also had repeated outstanding successes with t-bone lamb chops, pork loin chops, duck legs (confit-style) and duck breast (medium-rare), diver scallops, shrimp, eggs and chicken breasts.Specifically about this machine:Pros:1. Compact - doesn't take a lot of counter space about 11.5" wide x 14.5" deep x 12" tall2. Good starter recipe book, but the curious chef will want Douglas Baldwin's book - also available from Amazon3. Simple to use - out of the box only takes about 5 minutes to learn how to set it up and start cooking4. Easy clean-up5. Very accurate temperature maintenance - doesn't vary by more than 0.5 degrees, even without a re-circulating pump6. Much cheaper than commercial units, and much safer than used laboratory units!Cons:1. No vacuum bag sealer in the box. They are not that expensive to buy separately, but you definitely need one2. Heavy to lift when full of water - can be awkward to fill and move to cooking location, or when you have finished, heavy to lift to the nearest sink and empty of water.In summary, if it broke tomorrow, we would have to buy another one. It saves times and produces totally delicious food with much less obsessive use of a food thermometer. The fact that food can be frozen and reheated is a huge bonus for us.

5Good execution for a great technique

You should be careful to distinguish in reviews the commentary on the product itself and the technique of sous vide. Sous vide is simply awesome, and far better chefs than I have proven that. If you haven't experienced it yet, you should spend the $400 on a couple of trips to the French Laundry or Alinea or WD-50 instead. If you already have, then you know what you're looking for, and the real question is how close does this device come to giving the results obtained by a Fischer Scientific immersion circulator.I was little concerned about whether the device could maintain temperature without circulation. After playing with it and an thermometer, I can tell you that there is some gradient, but it was about a degree, which honestly is perfectly acceptable for food. After bringing it to 135 F and turning it off, 15 hours later it was 95 F, so the insulation works well. Essentially that's all there is to a sous vide machine. I can tell you that my poached eggs are perfect or that the flank steak was unlike any meat I had ever tasted, medium rare, tender, and incredibly beefy, but most of that is due to the technique, and this device competently executes the technique. As far as the user experience goes, it's silly that the lid has an insulation pad instead of built in insulation, you have to hold the button too long to turn in on and off, but the built in handles are cleverly placed.The only negative review here so far claims that the price is too high for what it is, and compares to a different product. I disagree. For this type of cooking you have 3 choices: high end chemist's rig for $1500, water ovens like this machine, and bubblers and crock pot hacks. Most of us are not willing to spend as much as a high end stove for this, and hacking a crock pot sounds fun until you can't find your soldering iron. The SousVideMagic mentioned explicitly in that review is a bubbler, essentially an immersion circulator without the circulation. With no insulation and no circulation, the temperature gradient will be large. Plus, although the base price is $139, that doesn't count the "1500D controller and an air pump". The whole kit costs $300. It is interesting to note that the same company has also come out with a "water oven" like the SousVide Supreme, and it's $430. Check out the website here: [...] .Sometimes there's a sweet spot in the price/performance ratio, and this machine is in it.

5Compact. Super. Automatic.

We bought this after a couple of months looking (unsuccessfully) for a replacement for our 15-year-old krups drip brewer which we loved until it finally pooped out and started leaking like a sieve. At some point in our search we said "maybe we should get serious." This is the first super automatic espresso machine we've ever owned so I can't compare it to anything but I will say this: we love it.We knew enough to know that "super automatic" is important if you don't like the actual manual process of making espresso (we don't) and since this one doesn't actually say "super automatic" but rather "compact automatic" I was a little confused but eventually learned that compact automatic just means it's a super automatic with a smaller footprint. For those really ignorant like us: Super Automatic means you fill the bean bin and the water bin once every so often, and then it's ready to go. When you want a drink - you turn it on and press a button - single espresso, double espresso, single lungo, or double lungo. Then you watch as it makes a bunch of interesting noises then fills your cup with beautiful, steaming hot frothy coffee. Then you drink it. Super automatic.The benefit of a compact super automatic is the smaller footprint of course. The downside is that you have to fill the bean and water reservoirs (and empty the dregs basin) more frequently than "regular size" super automatic. For us it is about twice a week - two adults home all day and we like coffee. We're actually probably going through more than normal right now because we're enjoying playing and experimenting with strengths, mixes, quantities, etc. It has been a few days and already I've figured out my tastes but it's still fun trying new things.If you love coffee and want to treat yourself - this is a winner. The small footprint is nice - it doesn't look like a commercial espresso machine sitting on our counter (though it's bigger than a regular drip maker). Again I don't have anything to compare it to since this is our first one but I can't think of anything about it we don't like. You have to remove the outside part of the steamer/frother to clean it, or you can leave it off when you froth and avoid that cleaning step. But I don't do any frothing anyway (wife does).It's super. It's automatic. It's compact. It makes incredible espresso, americana, lungos, long blacks, cappucino, and lattes. We are very happy. I will post back after our first full cleaning.August update: It has been 8 months and we love it just as much as when we first got it. We cleaned it once - it was trivial. No issues except that one bag of beans we purchased from Trader Joes were a little oily and they got stuck in the hopper - another reviewer also mentioned this. I removed the little cap from over the hopper (2 philips head screws) and left it off - not sure how or if that can hurt anything but it has worked fine since.Seriously we love this thing. There is nothing like feeling an urge for a cup a joe and 3 minutes later having one in your hands with nothing to do or clean up. And it is goooooood stuff. We were talking the other day and decided it's the best luxury gift we've ever given ourselves.

4Really Nice Machine So Far

PROS: Makes very good coffee and lattes. Sleek, good-looking appliance. Works as you would expect.CONS: (very minor) Chrome "heating" plate doesn't get warm enough to heat anything (who cares?). Beans on the "oily" side don't always feed smoothly from hopper to the grinder.I've owned several automatic machines over the years from Saeco and DeLonghi (most recently the DeLonghi ESAM3300 Magnifica Super-Automatic Espresso/Coffee Machine) that have acted as our go-to small office coffee makers. (I'm a latte-holic myself, 4 to 5 a day, and admitting that is the first step toward recovery I'm told...) I have a tendency to wear them out in 2 to 3 years because they get a lot of use, 5 days a week. But that is to be expected, at least by me, as these really are intended as home-use machines. That being said, this is a fine machine for it's job - which is to keep me in lattes!It makes very good, tasty shots of espresso for those lattes, steams my 1% milk great with a nice, dense foam, and the regular coffee drinkers are very happy with their full coffees.Tip: Best way to froth the milk?: swing the frother arm all the way to the left and stack your steamed-milk container with your cold milk in it on top of an empty coffee mug off to the side on the counter. That way your milk container is high enough to just sit there with the wand in it as it steams. You can walk away for a couple of minutes and do something useful. Just don't go too far away and "forget" it's steaming - what a mess! But the frother "froths" really well all by itself, doesn't over-bubble and spill over the side like some past machines have done. Well-designed.Right out of the box, it made a great-tasting first latte for me. One of the best, actually. I left the grinder on the factory setting, and set the rotating knob to between 1:30 and 2:00 o'clock position (just guessing) and it made both a great double-shot of espresso AND a great-tasting regular coffee on my first two tries (I used the "double" buttons on both the espresso side and coffee side - that'll make more sense once you see the machine and read the instructions).I've only had it about a month, but so far so really good. The only minor issue is that bean hopper "con" above. It's a bit shallow in slope, so my slightly oily beans (Costco/Kirkland espresso, roasted by Starbucks beans) get stuck sometimes during the grinding portion of the process, and I have to lift the lid and stir them a bit with a spoon to make sure they get down where they need to go - not a huge inconvenience.I've had a couple of the DeLonghi ESAM3300 Magnificas DeLonghi ESAM3300 Magnifica Super-Automatic Espresso/Coffee Machine mentioned earlier, and they are GREAT machines! (that's the one I have at home for weekend use). I'm hoping this latest DeLonghi for the office lives up to that model's standards. By the way, the model number for replacement water filters is: SER 3017. Google "Water filter SER 3017" though, to find it online, because it doesn't show up on Amazon. And DeLonghi customer service was no help at all via an emailed question about the filter, which should be a concern to them I would imagine. Hey Amazon, how about linking to the company that sells the filter?

5coffee bean fix

Bought this machine and right out of the box it was not drawing the beans into the grinder.Tried calling the manufacture and all I got was we can return it for repair.It's only a day old.So I got on Amazon.com and looked at the reviews and see I am not the only one having this problem.So here is the fix.List off the cover to the bean bin and remove the mushroom cap inside the bean bin where the beans go into the grinder.This can be done by removing two little phillips screws and pulling the mushroom cap up and out of the bean bin.Save this piece just in case you would need warranty work for something else.Now there is no problem with beans feeding into the grinder.My guess is that it's a safety thing so one would not reach in and put there fingers into the grinder.Hope this helps someone else.

4REALLY WORTH THE PRICE.

THIS is a very good compact refridgerator i love everything obout it,except that it dont has an interior light.But for me it suits my needs,i bought it for my entertainment room(man cave,sort of.).It is quite and seems to be keeping all THE JUICES cold(if you know what i mean).The 3 pans of ice maker works great too,regulate it to 6 an above to make the ice cubes faster.Also looks good in the room.I would recommend it to anyone who has a desire for one.

4Good Suction, Expensive

Despite the fact that the Dysons have never been a top pick on Consumer Reports (even though they consistently rate high for brand reliability), I went ahead and purchased the DC23 Turbinehead from Target for $399.As people often find when purchasing a new vacuum, they pick up a lot of dust and dirt in the carpet that their old vacuum left behind. Mainly because most older vacuums just lose suction even if you replace the filters and maintain all the parts. I find that to be frustrating and disappointing, and that's mainly one of the reasons that I went with the Dyson -- I'm hoping it lives up to their tagline (Never Loses Suction).The suction on the DC23 is good. The turbine head attachment spins quickly and pulls in cat litter and other little particles in the carpet. I was revolted by the giant thick dust ball I picked up in just one bedroom with the first use. The DC23 does it's job well. So here's the run down of what I like and don't like about this model:Likes-Excellent suction, vacuums well. Easily picks up all the cat hair and cat litter I throw at it.-Small, light weight and portable-Beautifully designed -- it's shocking to look at this model next to all the Hoovers, Dirt Devils, and Bissells of the world that look like something straight out of the 80's. Also glad they are moving away from the yellow plastic!-Easy to empty dust bin, no bags-Because of the small head, this vacuum can go where most uprights cannot -- under beds and tables.Dislikes-It's a little expensive, however, will be well worth it if it actually lasts a long time without losing suction-Storage is a little flimsy -- the hose just sort of hangs out off of the vacuum and the head attachment very loosely attaches to the canister base.

3good, not great

I read a whole bunch of reviews prior to purchasing a DC23 last year because of the price difference, and was taken by the raves about how much the new vac picked up on purchase. The most negative stuff I found related to the quality of plastic used, the awkward wrapping of the hose for storage, maybe a few comments about the head not standing on its own, things I didn't think would be that big a deal. I paid the premium price based on the marketing of the unit (an engineer doing things properly), thinking that if it didn't live up to the hype it would've been noted online. I expected to be delighted by this vacuum. I wasn't.After just about 6 months use:Plus- the canister does collect amazing volumes of stuff from floors, and it is cool to observe it doing so, but I note that it is now cleaning up after itself, so to speak, and so it isn't another brands shortcoming... Still, noteworthy performance.- I find the power head and floor attachments to be pretty good.- the power cord is really good at rewinding. No seriously, they got this much better than my last vacuum. Not too strong that it could be dangerous, but strong enough to be efficient. I like it a lot and I hope it works like this for the life of the product.Overall does vacuuming like a vacuum.Minus- I empty the canister every single use, as it looks quite full which is not something I ever worried about previously. I can live with that, but I've never seen anyone comment on how awkward emptying the canister into a garbage can is. The entire base kinda flops down and usually releases a cloud of dust no matter how carefully you open it. I live in an apt with a light colored carpet so when I empty it I invariably reinstall the canister and re-vacuum the area I just did to clean up the dust.- The clear plastic is kinda "cheap", as some have identified, being more lightweight than my last vacuum, but more troubling to me is that the hose is very lightweight too. I feel I have to be careful not to step on it lest I crush it permanently. This vacuum cost almost twice as much as lesser models with better hardware (@$600 in Canada, compared to @$300 for competitor sale models), so I'm not impressed with this level of quality.- The power head doesn't stand on its own, as mentioned, and it turns out that this IS annoying to me. Canister vacuums have done this for more than 20 years that I've been aware of, and the dyson engineers dropped or forgot this because they didn't do analysis of how people would use the product...? Or dropping the handle to the ground was a perverse operational cost/benefit decision of some type? Also the lack of a power switch on the handle turns out to be ergonomically annoying too...- The hose, as someone else mentioned here, comes off the unit clockwise instead of being centrally located. I imagine this improves the airflow, probably a good thing for suction. But, together with the narrow wheelbase, it is occasionally awkward to manoeuvre (counterclockwise in tight quarters) and sometimes makes the unit tippy compared to my last unit. I actually unhooked the hose from a support so it would manoeuvre better.- I almost never do the wrapping of the hose on the base for storage as shown in the marketing pics because the hose is so rigid and time consuming to do "proply". And then if you try and move the unit with the hose wrapped and head on it is quite awkward. PITA ergonomically. I just put it away with the wand compressed (good feature) and power head on and the hose laying everywhere.- This lead to my next beef, which is I bought some accessories including a "soft brush" to do blinds. Made of the same dyson plastic, functional but not impressive, and I observed at the time that storing these accessories was gonna be a nuisance, as they don't fit on the unit. They naturally ended up on the floor of my closet and a few times the lightweight hose was left on top of them. The bristles warped from the weight of the hose in a short time and can't be straightened. Again, reference the cost of these things, and I am disappointed that the nylon in the brush is cheap and insubstantial. I've never had accessories do this. I believe they have used the wrong brush material for accessories of this type.Bottom line: an ok product for its core function, charging too much for the value provided in my view, and not nearly as substantive qualitatively as I would've thought a consumer good at this price point would be. I rate it a 3, by which I mean I might not buy another one of this vintage, quality and price; I wouldn't put it out of the running, but I'd look closely at alternatives. Dyson needs to address the ergonomics and quality values of this product to perform up to its marketing hype.

5Works well if you do not have fully carpeted floors

If you live in a residence that is predominantly hardwood floor, this is one of the better vacuums - no make, that the best. The turbine-powered airbrush works well for moderately shaggy rugs and floors, and while it is not a cheap canister, it is money well spent. I have never sucked out so much dust. Dyson has always scored a very high mark for design and this is no exception. It is quite easy to dump all the dust out from the bin, and I prefer canister vacuums since they're easy to put away.Get the Motorhead if you have fully carpeted floors. For me the Turbinehead is more than enough.

5High Design / High Performance... the Ferrari of espresso makers

I just got this, and just tried it our for the first time, and I am madly in love with this espresso maker. The look is fantastic, I mean how often do you get to cook with something you're likely to see in the MOMA design wing? However, it's one thing to make a pretty object, but it's another to make a beautiful object that functions better than any other of it's kind: the design is fantastic. It pours without a single dribble, the handle doesn't get hot nor melts like your usual stove top maker, and it's Stainless Steel which means you're not going to leach out any nasty chemicals or flavors. I also love it because it give you the option to make a half batch, allowing this to function as a 3 cup when it's just you or a friend, or a 6 cup when you have company. I almost bought the 10 cup just so I could have the versatility of a 5/10 cup... but i'll never drink that much coffe... I mean it is espresso... which makes the 3/6 size ideal! I had lots of Bialettis when I lived in Italy, but I have a feeling nothing will be better than the espresso I make from my new Stella.

I too have had numerous aluminum stovetop espresso makers over the years, and when another bakelite handle came loose after about one year of daily use, sending its coffee maker into the recycle bin, I decided to try spending a little more for a better product. I finally decided on this one largely because of Marfa's glowing review (and because I thought it downright gorgeous in the photos). Marfa was spot on. This thing functions flawlessly, makes the best coffee I've ever had at home, is easy to clean (still not a trace of calcium sediment after four months of use) and doesn't give me a daily dose of aluminum. Oh, and it's actually more beautiful in person.

1Arrived broken and with someone's writing on box

I am so disappointed at spending $163 (with shipping) for your Stella Aroma coffee maker, only to receive it1. obviously broken, the hinge in the top cap is broken, and the cap was crooked.2. someone had written phone numbers and stuff on the product box, so it had obviously been sent to someone else, and then returned, and you sent it out again to me!the product was just stuck inside it's box, no instructions, no packaging to protect it, just a card.

5Works like a charm, better than Excalibur models

I feel confident in saying this Nesco Gardenmaster is a better quality product than the Excalibur 9 tray, both of which I have used. I first tried the Excalibur and quickly realized it took too long and was too cumbersome to be effective and needed a new thermostat after just three weeks. I found myself babysitting the unit, switching trays and drying only during the day when I could turn it off manually. The 9 tray I had did not have an automatic timer and was just a pain in the neck. I sold it on Ebay after two months. I ventured out into the world of dehydrating again after two long years of resentment. I tried the Nesco and was so happy I did. The digital controls offer exact results every time, the automatic shut-off allow you to dry at night without waking to adjust trays or check results.The capacity is huge with the add on trays offered and the powerful fan dries the bottom tray equally as fast as the top. The top mounted motor keeps drips from causing a clean-up nightmare and the quality of food is excellent. I've dried fruits, vegetables, made pounds and pounds of jerkey and have experimented with some raw food "baking" which all turned out perfect.I love the Nesco Gardenmaster and suggest you seriously consider it whether a novice or pro. If you are considering an Excalibur, I highly recommend the Nesco as I found it performed substantially better than the Ex,has design features to make your drying easy and fun, and costs about $50.00 less.

5Nesco Gardenmaster Dehydrator

I bought 2 Nesco American Harvest Food Dehydrators in 1974. One for me and one for my grandmother. They were used extensively for drying fruits and vegetables as well as making jerky. After 24 years, the plastic became brittle so I thought it was time to replace them. Because the original dryers worked so well for so long, I immediately looked for the same brand. I bought the Gardenmaster plus 6 extra trays because it is the largest model and I dry large quantities. Within the past 2 weeks - how long I've had my new dryer - I have dried about 8 bushels of apples. Since the tree is still full, I will probably dry that many more before moving into jerky season.The only complaints I have seen on this dryer have related to concerns regarding "recipies" not listing exact drying times. As an experienced food dryer, I can tell you this is the same no matter which dryer you use. I would be concerned about any dehydrator that stated otherwise - drying time depends on the moisture in the item your drying, humidity in the room where you have your dryer, and the amount of food placed on trays to dry. The apples I'm drying right now are VERY juicy so it is taking about 18 hours to dry 10 trays of them to perfection. After you have dried food for a while, you will be able to guess about how long it will take to dry a pariculy batch of food.

5This is the one to get

This is a high quality food dehydrator that is simple to use because of the digital control and the top heater and fan. I wouldn't even consider a food dehydrator that does not have the top heater/fan. This one does not need to have the trays rotated during use and also heats to the recommended 160*.I have had my Nesco American Harvest FD-1020 for a year and have used it so far only to make ground beef jerky, but I've given it extensive use for that. I cook the meat at the 160* setting for approximately 6 1/2 hours, but the amount of time varies by the ambient humidity. I set it outdoors to use and when in southern Arizona, if the meat slices are thin, 6 hours was sufficient. In Texas, I have needed to leave the meat cooking for 7 hours. I don't care for the smell of the cooking meat, necessitating the outdoor use.For ease of cleaning, I recommend purchasing the clean-a-screen mesh sheets for each tray, Nesco American Harvest MS-2-6 Clean-A-Screen Plastic-Mesh Dehydrator Screens, Set of 2. Also, buy at least one additional set of trays, Nesco American Harvest Add-A-Tray for FD-1000, Set of 2. Buy a set of the mesh screens for each set of trays. Only a single mesh screen comes with the dehydrator. Do be careful to order the correct trays and screens for the specific model of Nesco deyhdrator.I'm the type who wants detailed instructions, and the included instructions are poor. I finally had to dive in and give it a try when I didn't know exactly what to do. After experimentation, for the ground beef jerky, I use one packet of the Nesco Jerky Spice Works, hot and spicy flavor, plus a teaspoon of ground cayenne pepper to 1 1/2 pounds of 96% lean ground beef. It is easy to make the jerky strips using the Nesco BJX-5 American Harvest Jumbo Jerky Works Kit. For 6 lbs of meat, I needed 8 trays, and they were totally filled. Perhaps it would be better not to crowd the slices, but mine has worked OK and I want to make lots of jerky when I'm going through the trouble of making it. I store the jerky is an airtight container in the fridge or in sealed bags in the freezer.
